I started roasting a sheet pan or two on Saturday or Sunday mornings.
I had let that veggie-roasting habit slide, but I started it up again this fall.

you could use whatever veggies you have on hand.
Ive added beets, turnips and sweet potatoes to the mix.
I love using ground fennel, paprika and thyme or a spice blend like zaatar.
Getting back into my veggie-roasting routine has helped me with my weight-loss goals.
Even if youre not trying to lose weight,eating more vegetablesis always a good goal.
