Meanwhile, heat oil in a large nonstick skillet over medium-high heat.
Using a slotted spoon, transfer the beef to a medium bowl, reserving drippings in the pan.
Add onion to the pan; cook, stirring often, until softened, about 5 minutes.

Return the beef to the pan.
Cut the sweet potatoes in half lengthwise.
