Coat a 9-inch pie pan with cooking spray; place on a large rimmed baking sheet.
Heat 1 tablespoon sun-dried tomato oil in a large skillet over medium-high heat.
Add onion; cook, stirring occasionally, until softened and slightly translucent, about 3 minutes.

Stir in garlic; cook, stirring constantly, until fragrant, about 30 seconds.
Let cool for 5 minutes.
Fold in the cooled onion mixture and 12 cup feta.

Pour into the prepared pie pan; sprinkle with the remaining 14 cup feta.
Let stand for 10 minutes before slicing.
You don’t need to reheat the vegetables before adding to the quiche.
