This recipe makes enough simple syrup for about 8 cocktails and can easily be doubled for a crowd.

Remove from heat and cool to room temperature.
Strain and refrigerate until chilled, about 30 minutes, and up to 2 weeks.
To prepare cocktail: Fill a shaker half full with ice.
Add gin, simple syrup and lemon juice and fill with ice.
Cover tightly and shake well.
