Peel and discard papery outer layer of 1 garlic head.
Cut about 14 inch from the top of the cloves.
Place the garlic on a piece of foil big enough to enclose the head.

Drizzle with 1 teaspoon oil; seal the foil securely.
Place on a large rimmed baking sheet and roast for 10 minutes.
Roast, stirring once, until tender and browned, about 20 minutes.

Remove the garlic from the foil; let stand until cool enough to handle.
Combine 1 tablespoon each melted butter and herbs in a small bowl.
Squeeze the roasted garlic cloves out of their skins (discard skins).

Add the roasted garlic to the butter mixture and mash with a fork (it will be lumpy).
Pour the garlic butter over the sweet potatoes and toss to combine.
Season with pepper to taste.
