Coat a 12-cup muffin tin with cooking spray.

Lightly beat 2 eggs in a large bowl.

Fold in 12 cup almonds and 14 cup coconut until evenly combined.

Divide the mixture among the prepared muffin cups (about 13 cup each).

Sprinkle with the remaining 14 cup almonds and 1 tablespoon coconut.

Cool in the pan on a wire rack for 10 minutes.

Remove the cakes from the pan to the rack.

Serve warm or at room temperature.

To reheat, place one cake in the microwave and heat it in 30-second intervals until warm.
