These plant-based potpies are worth the effort.
The comforting dinner Anderson demonstrated was herHarvest Veggie Pot Piesmade with seasonal veggies from her personal garden.
Potpies are a peak comfort meal, and Andersons recipe is entirely unique.

Not only are they muffin-sized potpies, making them perfect for kids, but theyre also vegan-friendly.
We got our hands on Andersons fall-forward recipe.

Cut the plant butter into the flour mixture until it resembles breadcrumbs.
Stir the flaxseed into the water, then add to the bowl.
Divide it into 2 pieces, one thats about one-third of the whole and the other thats approximately two-thirds.
Cover and refrigerate for at least 30 minutes.
Step 2
Preheat the oven to 400F.
Line a baking sheet with parchment paper.
Step 3
Make the filling: Place the squash, cranberries, and shallot on the prepared baking sheet.
Roast until the squash is golden brown, 30 to 40 minutes.
Add the garlic and cook, stirring often, for 2 minutes.
Stir in the beans and sage and season with salt and pepper.
Cook, stirring occasionally, until the carrot has softened and everything is golden, about 5 minutes.
Pour in the wine and continue to cook for 1 minute.
Remove from the heat and let cool.
Place them in a muffin pan and mold to the shape of the cupsthese are your bottom crusts.
Stir together the roasted squash mixture and the cooked vegetables, then spoon that into the bottom crusts.
Use a fork to pierce holes in the center of each pie.
Bake until golden, about 35 minutes.
Cook, stirring constantly, until the flour turns golden, about 3 minutes.
Bring to a simmer and cook until the gravy thickens, about 5 minutes.
Taste and season with salt and pepper.
