Its the perfect salad for a high-protein lunch or dinner that keeps you full and energized.
As with any loaded recipe, we start by adding smoky bacon for flavoringa little goes a long way.
The salad is packed with antioxidant-rich broccoli and scallions, calcium-rich Cheddar cheese and tender chicken for protein.

Remove from heat; use a slotted spoon to transfer the bacon to a paper towellined plate.
Sprinkle chicken tenders with 14 teaspoon each pepper and salt.
Return the skillet to medium heat.

Transfer to a cutting board; let rest until cool enough to handle, about 5 minutes.
Cut or shred into bite-size pieces.
Add chopped broccoli and the cooked bacon and chopped chicken; toss to coat.

Add 34 cup Cheddar and 12 cup scallions; toss to combine.
Just a light steaming, though, so the broccoli maintains its raw attributes and a nice crunch.
We suggest storing the salad in an airtight container in the refrigerator for up to 3 days.
