Serve over creamy polenta or buttered whole-wheat egg noodles.
Adding a squeeze of lime juice and a sprinkle of cilantro just before serving brightens up the flavors.
If frozen roasted corn isn’t available, substitute regular.

Serve over a bed of brown rice or brown rice noodles to catch all the sauce.
