Here’s what works (and what doesn’t).

The results were surprising.

I collect and wash 5 dozen eggs every dayand they sell out at our farmstand by noon.

So I scoured the internet to determine cooked versus raw eggs.

This included TikTok and my old trusty culinary schoolbooks.

Here’s what I triedand what worked and what didn’t.

Cooked eggs spin faster, more evenly and smoothly, while the raw eggs wobble and barely spin.

And I couldn’t tell which was raw or which was cooked, especially when the eggs were cold.

Raw eggs carry the light through the shell, while cooked eggs don’t.

If it’s a raw egg, you now need to use it as such.

Place large eggs in a single layer in a saucepan and cover with water by 1 inch.

Set the pan over medium-high heat and bring to a boil.

Transfer the eggs to a bowl filled with ice water and let sit until cool enough to handle.
