We let the chops sit in the brine for one hour.
Place pork chops and water mixture in a zip-top plastic bag; seal and refrigerate 1 hour.
Preheat a grill or grill pan to high (450F to 500F).
Remove chops from bag; discard marinade and pat chops very dry with paper towels.
Drizzle chops evenly with oil on both sides; sprinkle with black pepper and remaining 1/2 teaspoon salt.
Remove from grill; let rest 5 minutes.
