Line a baking sheet with parchment paper.
Scrub, dry, and poke the sweet potatoes all over with a fork.
Meanwhile, line a plate with paper towels and set near the stove.
Heat a large skillet over medium heat.
Use tongs to transfer to the paper towels to drain.
When cool, either crumble with your fingers or roughly chop with a knife.
and serve with the butter, scallions, bacon, cheese and crema on the side.
