Drizzle with oil and 1 tablespoon lemon juice.
Sprinkle with 1 tablespoon oregano, salt and pepper.
Roast until the potatoes are tender, 25 to 35 minutes.
Drizzle with the remaining 1 tablespoon lemon juice and more oil, if desired.
Serve sprinkled with the remaining 1 tablespoon oregano.
