Brush cut sides of squash halves with 1 tablespoon olive oil.

Divide 3 cups spinach between the cavities.
Drizzle with the remaining 1 tablespoon extra-virgin olive oil (112 teaspoons each).

Roast until the spinach is wilted, about 15 minutes.
Let cool for 5 minutes.
