We put a twist on a classic oatmeal-raisin cookie with the addition of tahini and walnuts.

Tahini adds a hint of salty, nutty flavor, while toasted walnuts bring a satisfying crunch.

Whisk oats, pastry flour, all-purpose flour, cinnamon, baking soda and salt in a medium bowl.

Beat tahini and butter in a large bowl with an electric mixer until blended into a paste.

Beat in granulated sugar, brown sugar, egg and vanilla.

Stir in the oat mixture until just moistened.

Stir in raisins and walnuts.

Using damp hands, flatten each dough ball slightly.

Carefully transfer the parchment with the dough balls to the air-fryer basket.

Cook at 360F until golden, 6 to 7 minutes.

Remove with a wide spatula to a wire rack to cool.

Repeat with the remaining dough.
