Making soup doesn’t have to be an all-day affair.

This recipe was originally made for one serving but can be easily adapted to serve more.

Cream cheese adds the final bit of richness and a hint of sweet tang.

Look for whole-wheat or whole-grain ravioli in the refrigerated or frozen section of the supermarket.

Tortellini can be used instead of ravioli as well.

Serve with warm whole-grain pita bread.

Add protein with cooked shrimp or cubed tofu and a pop of freshness with cilantro and lime juice.
