Pickling the beets in rice vinegar and thyme leads to a tangy, herb-infused flavor.

Making your own pickled beets also eliminates any added sugars that might be in a store-bought version.

The extra dressing is delicious served with grilled vegetables.

Smashing some of the chickpeas into the tuna enhances the texture and helps hold the filling together.

Salmon-Stuffed Avocados

If you’re not a fan of cilantro, mix in freshly chopped basil or dill instead.

Using prepared salsa and coleslaw mix means this recipe is on the table in just 20 minutes.

Chia seeds add a healthy dose of fiber to keep you full and satisfied.
