Savory Bean Spinach Soup
Let a slow cooker complete this vegetarian soup.
Serve it in cups as a sandwich side or ladle it into bowls for a light meal.
Although it’s technically an English soup, its origins are decidedly Indian.

Chicken Hummus Soup
Adding hummus to a soup may sound odd, but give it a try!
It thickens up this 15-minute chicken and vegetable soup recipe and provides added protein and fiber.

It’s thick, mainly consisting of chicken broth, egg yolks, lemon and rice.
Here we use smooth silken tofu in place of yolks and add fresh dill and healthful turmeric.
Add an extra drizzle of olive oil on top of each portion to give it an extra-luxurious taste.

It has seemingly limitless versions, but most have curry and a bit of chicken.
We’ve added tart Granny Smith apples, plenty of spice and a touch of coconut milk.
