This set-it-and-forget-it slow-cooker soup recipe is just that.
Juicy chicken thighs are cooked in the same pan as the potatoes and kale for minimal cleanup.
This low-calorie sheet-pan meal combines chicken thighs and sweet potatoes and cooks up fast in a very hot oven.

Serve with a fall salad of mixed greens, sliced apples and blue cheese.
We added beans to amp up the fiber and protein for a fast and healthy dinner.
Try it with any greens you have in the fridge, such as chard or spinach.
