A dollop of pesto on top is also super-delicious.

Our slow-cooker rendition is literally beefed up with brisket and showcases whole-grain rye berries, a source of fiber.
Barley adds a chewiness to provide texture, while dried mushrooms lend an earthiness and depth.
Finishing with acidic lemon juice brightens the flavors.

If frozen roasted corn isn’t available, substitute regular.
Sour cream helps cut the heat, but you could also use plain strained yogurt.
The top tortilla layer gets beautifully crispy in the slow cooker.

We use pinto beans, but you could easily swap in black beans.
