Meal-Prep Curried Chicken Bowls

Curry doesn’t have to take hours to prepare.

Topped with spinach, peanuts and an egg, these bowls make for a satisfying breakfast.

Sprinkle with crushed red pepper for extra heat.

When you’re ready to eat, shake the dressing well, add it to the salad and toss.

Keep prep time short by using rotisserie chicken (or leftover chicken) and a pouch of microwaveable quinoa.

We love the crunch of the sunflower seeds and the unexpected flavor of roasted peppers.

The tangy citrus dressing is a refreshing flavor with the sweet caramel of the roasted sheet-pan veggies.
